An unusual combination of dryness and cold. An outstanding sunshine from May to the end of October. The growth cycle slows down over the last weeks due to the drought which leads us to a late picking. A vintage marked by an outstanding concentration of tannins of extreme fineness.
Technical data
Picking dates: From 29th September to 20th October 2010.
Blending: The blending consists of 75% Cabernet Sauvignon, 25% Merlot.

Ageing
Blending in January. Maturation for 21 months. 60 % of new oak barrels.
Fining in barrel with fresh egg whites.
Final blending before bottling.
Tasting notes
Deep and intense colour. On the nose a sensation of freshness, with red and black fruits aromas, as well
as toasted and vanilla notes. The attack is very firm, the mouthfeel gains strength with an exceptional
tannic richness. Powerful, smooth and harmonious tannins.
Vinification
Plot by plot and intra plot vinification.
102 thermoregulated
stainless steel vats for 103 vine plots.
Variable capacity of the vats : 36 to 220 hl.
Selection of batch conducted according to the varietal, age of vines,
terroir and grapes maturity.
Traditional vinification at 26-28C during 18 to 25 days.
Moderate pumping over every day, or pigeage or delestage.
Malolactic fermentation through co inoculation.
