Ageing
A blend French and American oak barrels and stainless-steel tanks.
Food pairing
Great with meaty fish like halibut and cod, shellfish, poultry, pork, risottos and cream-based soups.
Tasting notes
Scents of ripe apples, pear, a touch of citrus with subtle notes of vanilla and toasted caramel. On the palate it's fruity with a lightly toasty, vanilla finish with a touch of baked bred from the sur lie aging. It is medium bodied with a nice complexity and balance.
Vinification
Dry conditions produced small, concentrated berries with great flavors & acidity. A blend of lots from French and American oak and stainless-steel tanks. Undergoes “sur lie†aging while completing malolactic fermentation to create a smooth & velvety texture.
