Tasting notes
Pink Flamingo is a beautiful pale and salmon color draped in a bright, shiny structure with light golden glints. An intense nose, with berry, peach and apricot notes is followed by an exotic fruit cocktail while the palate is fruity and fresh. The perfect complement to seafood, fresh salads and grilled Mediterranean vegetables. Very enjoyable by the pool and as an aperitive as well.
Description
The Pink Flamingo wines are unique, elaborated from vines planted in the sands of Camargue, where the vine stocks have resisted the attacks of phylloxera, the insect pest which rages all over the world. The vineyard of Pink Flamingo in Camargue, on bars of sand, in an unobstructed environment between sea and lagoon, represents several hectares of vines which continue to produce grapes almost forgotten: those originating from these non-grafted stocks. Our vineyard is now fully certified as organic viticulture and produces wines of the highest quality with an absolute respect of the environment and the biodiversity.
Vinification
As soon as the harvest is in, the grapes are cooled to preserve their aromatic potential. Pressing is one at a low pressure to control the extraction of the best juices. This follow-up allows the musts for the fermentation of the Gris Tête de Cuvée to be kept separated. Then they are clarified and fermented at regulated temperature.
