Second wine of Chateau Sociando-Mallet, La Demoiselle is produced from the younger vines of the property, and by the plots whose soil is more clayey.
Lighter than the first wine, La Demoiselle de Sociando-Mallet charms by its straightforwardness and its fruity and well-rounded character.

Manual harvesting in small crates with sorting of the grapes before de-stemming.
Classical wine making, with native yeasts, in lined concrete and stainless steel vats, temperature-controlled.
Vatting period : 25 to 30 days.
Malolactic fermentation in vats, without addition of lactic bacterium.
Ageing of 25% of the wine in new oak barrels during 11 months. Total ageing of 18 months.
Racking every 3 months, by the plug.
