Harvest

Merlot: September 28th (young vines) - From October 1st to 5th
Petit Verdot: September 28th and 29th
Cabernet Franc: October 5th
Cabernet Sauvignon: October 5th (young vines) - From October 6th to October 11th

Vinification

Alcoholic fermentation: lasted 8 days in temperature controlled stainless steel vats
Pumping over: twice a day - 1.5 to 2 the volume of the vat
Temperature: 30 Celsius
Maceration: Merlot: 20/23 days
Petit Verdot: 20/211 days
Cabernet Sauvignon: 19/26 days
Cabernet Franc: 21 days
Malolactic fermentation: In vats, a few wines in barrels
Ageing: 50 % new oak barrels for Rauzan-Segla and 5 % for Segla 18 months on average - French oak - Medium toast - Racking with the candle every 3 months, fining with egg white é No filtration

Weather conditions

Winter was very rainy and mild, so the bud burst took place under favourable climatic conditions at the end of March, beginning of April. Growth started quickly but its evolution was slowed down by temperatures in April which dropped significantly. A mild and dry spring (temperatures were higher than normal) allowed an easy flowering at the beginning of June but cool temperatures in July disturbed the “véraison” process which began only at the end of the month (the last ten days of July were hot and dry).
The weather during August and September was good and allowed the picking to be realised in good conditions
