Food pairing
Goes harmoniously with red meats and medium to strong cheeses. The perfect pairing might be a Creamy Spinach and Mushroom Lasagna or a Beef Stew with Carrots and Potatoes.
Tasting notes
Ruby coloured. Rich and bold, the presents aromas of ripe red fruit and spices. On the palate, it starts and elegantly, leading to a medium-bodied wine with good structure and pleasant tannins. Notes of nuts, blackberry jam and cloves. Smooth and harmonious.
Winemaking
Harvest started in the beginning of September. Grapes were hand-picked and carefully selected, arriving at the winery in small 20kg crates. The crates were cooled down for 12 hours in a cooling chamber before initiating the fermentative process. Fermentation was conducted in stainless steel vats with temperature control. A small part of the lot aged in 2nd and 3rd year Franch oak barrels for 9 months.
