                                Background
                                      The Collesano Collection celebrates the Tuscan winemaking tradition and the passion of the Castellani family for Art and Nature. The Andrea Collesano's evocative graphics are associated with the most famous Tuscan wines, selected and aged in Castellani winery cellars, wines of great value created to accompany the finest cuisine.                                    
                                  Food pairing
                                      It pairs really well with fresh vegetables, raw fish and lighter meals. Fish and shellfish are classic pairing partners. Served chilled.                                    
                                  Vinification
                                      This is an international grape variety that when cultivated in Sicily, expresses a decisive character, while maintaining its fresh and elegant taste. This grape prefers 
terrain that is typically sandy and sloping, and with lots of sunlight.
Collected from the grapes at the beginning of technological maturation in to preserve the acidity and freshness. The harvest occurs around the middle of August at night in to preserve the fragrance of the grapes. The vinification is the traditional "white method": the grapes are gently pressed using advanced winemaking techniques and equipment. The fermentation takes place at low temperature. After the stabilization procedure, the wine is bottled using modern technologies.
