Technical Info

Food pairing

As aperitif, with light or medium rich plates in general, white meat, also raw meat (like tartare or carpaccio) and fat meat and salt porks, seafood in general and crustaceans frilled or raw, fresh cheese.

Maturing

vinification process: Low-pressure, very gentle whole berry press before fermentation. Fermentation controlled at 16-18C (60-65F) for 45 days undar slight pressure in stainless steel autoclaves. The wine is aged sur lie for 9 months in the steel autoclave with daily batonnage. Minimun bottle ageing for 6 months before release.
