Jack Tar Cellars

Jack Tar Cabernet Sauvignon hails from the west side of Paso Robles, where ancient seabeds of pure limestone and fossilized shells shape a truly distinctive terroir.

Here, warm daytime temperatures are tempered by cool Pacific breezes and dramatic nighttime drops of over 50 degrees, allowing the grapes to ripen with abundant fruit while preserving freshness and natural acidity. Sourced from this remarkable site, Jack Tar is crafted in a balanced style — harvested earlier for lower alcohols and showcasing vibrant red fruits like cranberry, raspberry, and strawberry alongside deeper notes of currant and blueberry.

The name pays homage to America’s Revolutionary War sailors, known as “Jack Tars,” and the label features a haunting 1890s Gustave Doré illustration from Coleridge’s Rime of the Ancient Mariner, a nod to the land’s oceanic origins. Crafted by winemaker Britt Nichols, Jack Tar is approachable, delicious, and a true expression of Paso Robles’ westside character.
