Vinification
Salento (Salentu in local dialect) is the south-eastern extremity of the Puglia region, sometimes described as the "heel" of the Italian "boot". The area is rich in vineyards and olive groves and the typical willow trees that give the name to the wine. After an accurate selection, the grapes are vinified following the traditional method without the addition of any concentrated must. The primary fermentation takes place in stainless steel tanks at controlled temperature. Very good to be drunk young it develops into velvety softness with further ageing in bottle.
Description
Negroamaro is a dark-skinned grape best known in the Puglia region in southern Italy. The wines from this grape show a deep ruby-red color in youth, graduating to richer, darker red after a couple of years. Its aromatics are elegant, and young Negromaro displays notes of fresh red cherry, forest fruits, licorice and tobacco. Grown throughout Puglia, Negroamaro is most often associated with the southern part of the region: the Salento peninsula. The region’s Mediterranean climate is warm and has limited rainfall, an optimal environment to cultivate the hardy and drought-resistant Negroamaro variety to ripeness.
