Vinification
Hand harvested at the beginning of November, fermentation takes place in concrete tanks with manual pump-over to improve the extraction of the color and the varietal aromas. Extended maceration then takes place for over 40 days. The wine is aged for 12 months “sur lies” in oak barrels and for the next 6 months in concrete tanks followed by a bottle aging of over 15 months.
