Vinification
We select our Merlot in the production area of Colli Euganei, in Veneto region, one of the most interesting Italian cru for this popular International varietals. Old traditional vinification method: completely mature grapes are harvested from vineyards and processed in membrane presses. Soft presses, fermentation at controlled temperatures and prolonged maceration with the skins.
