Food Pairing

Fish, seafood, goat cheese, biscuits or simply as an aperitif.

Soil

Very stony topsoil, over Upper Kimmeridgian limestone.

Tasting Notes

Very rich citrus aromas, lemon and grapefruit. Harmonious, good balance.

Vinification

Pressing with light pneumatic pressure, removal of end of pressing juices. Settling of the juice, thermoregulated fermentation at 17°-18°C in stainless steel tanks. Aged on fine lies for 5 months. Racked twice after ageing. Fined with bentonite, followed by light earth filtration. Cold tartric stabilisation.
