Tasting notes
Gris de Gris is a beautiful extra pale color almost white and crystalline. Lemon notes accompany a zesty freshness and citrus fruits. A fruity and fresh mouth feel given by Grenache from these estate properties that are harvested at perfect maturity. Opening with a nice minerality, the salty side of this wine expresses itself with great purity and structure. This expression complements a wide range of seafood. For cheese lovers, this wine also complements goat cheese and old Comté. Very enjoyable with creamy and fruity dessert as well.
Estate
The Pink Flamingo wines are unique, elaborated from vines planted in the sands of Camargue, where the vine stocks have resisted the attacks of phylloxera, the insect pest which rages all over the world. The vineyard of Pink Flamingo in Camargue, on bars of sand, in an unobstructed environment between sea and lagoon, represents several hectares of vines which continue to produce grapes almost forgotten: those originating from these non-grafted stocks. Our vineyard is now fully certified as organic viticulture and produces wines of the highest quality with an absolute respect of the environment and the biodiversity.
Vinification
The night harvest helps increase and maintain quality because it preserves the fruit and its fresh aroma. Pressing is done at a low pressure to control the extraction of the best juices, this wine is made exclusively with first press juices. Then they are clarified and fermented at regulated temperature.
