Mollard and Fillon
Sebastien and Beatrice Fillon and Nicolas Mollard are well-known characters in the Terrasses du Larzac making critically acclaimed wines at Clos du Serres. They are now embarking on a new project: A collaboration with their neighbouring growers, designed to promote sustainable viticulture and highlight the potential of the great terroir around the village of St. Jean de la Blaquiere.
Harvest
Manual grape picking starts when tasting shows they're ripe.
Vinification
Each land parcel is vinified separately, total de-stemming, unpressed grapes. Daily circulation. Occasional draining and lees circulation as tasting indicates. Maceration for 12 to 18 days
