Tasting notes
A fresh and expressive bouquet with notes of white flowers, citrus fruits and peach. A precise and tense wine in the mouth, with a very pleasant salty finish. All together a fresh and tasty Mâcon-Villages. Ideal as an aperitif, but also with poultry and veal in creamy sauce, creamy risotto with meat or fish, grilled
fish, or sushi.
Estate
This Estate of around forty hectares is located in Davayé, Saône et Loire, South of Burgundy. Managed by Sébastien Collonge, the Domaine respects sustainable viticulture principles. For the red wines, the grape varieties are Pinot Noir and Gamay are planted on granite soils. As for the white wines, the Chardonnay vines are planted on a clay and limestone soil.
Vinification
The grapes are harvested mechanically. They are pressed in pneumatic press right when they arrive at the winery. The must is allowed to settle completely. The wines are vinified in thermo-regulated stainless steel vats at 17°C. The Mâcon-Villages is aged on fine lees during 6 months, in stainless steel vats.
