Estate

Paul-Joseph Cyrot, at the time director of the Château de Pommard and Clos de Tart Morey-Saint-Denis, founded this estate in the 1920s. Four generations have followed each other since, at the Domaine, each bringing new parcels of vines: Burgundy, Volnay, Maranges 1er Cru, Santenay 1er Cru, Pommard and Pommard 1er Cru, an exceptional terroir for Pinot Noir. In 1989, Olivier, his great-grandson, took over the estate. With his wife Fabienne, they manage the 6 ha family estate. Cyrot-Buthiau's small terraced vineyards are meticulously tended by the award-winning winemaker and owner.

Vineyard

Les Arvelets is 3.36 ha (8.3 acres). It is the northernmost premier cru in the Côte d’Or. It lies between 310 and 340-meters elevation. The overall slope is moderate, which is accented by the fact that several large terraces have been created to fight erosion. It faces east, occasionally slightly southeast because of minor waves in the topography. The upper third of the vineyard has shallow soils (50 cm) brownish-red, weakly calcareous, clayey soils. As a whole, the vineyard is rocky, with 15-30% gravel-sized or larger stones on the surface. Many of these rocks contain an abundance of fossils, and it is not uncommon to spot large, fully intact shells within minutes of stepping into the vineyard.

Vinification

Pommard is a commune appellation with many 1er cru sites and making only red wines. The Pinot Noir grapes for Cyrot-Buthiau Pommard are on average 40 years old and grow on clay-limestone soil, hand harvested and fermented in oak for 15 to 18 days. The wine is aged for 12 to 14 months in oak (20% new) and bottled after a light filtration.
