Domaine Chanson - Pernand-Vergelesses - Les Caradeux 2015
Vintage
After a cold winter and a mild spring, the weather conditions in summer (with markedday and night temperature differences) were ideal, leading to ideal conditions for ripening. The harvest took place midSeptember under bright sunshine. The white wines show aromas of exotic fruit, as well as fragrant floral notes.
Estate
Founded in 1750, Chanson today is one of only six producers in Burgundy still remaining from the 18th century and earlier. Domaine Chanson's extensive holdings, and the extraordinary rigor and precision of its approach in the vineyards and cellars, result in wines of individuality and quality. The winery is led by two of the most respected names in Burgundy: General Manager Gilles de Courcel (of the renowned Domaine de Courcel estate in Pommard) and Winemaker Jean-Pierre Confuron (named "2015 Winemaker of the Year" by La Revue des Vins de France).
Vineyard
This vineyard of 4.7 acres is ideally located on mid-slope close to the hill of CortonCharlemagne. It has the same marly limestone and clay silt structure and height as its famous neighbor. The only difference is the East exposure of the "Caradeux" which makes of this plot an exceptional terroir providing unique mineral characteristics.
Vinification
Chanson vinifies all their wines 100% whole cluster. They believe the complexity and structure of the wines is greatly enhanced, and the vinification process is improved. The major condition is that grapes must be perfect in terms of ripeness and condition. You can count on one hand the estates dedicated to whole cluster vinification in this manner. Then Champagne-style fractional pressing is done: very precise pressings for
the purest juice, with lots vinified separately in small tanks. The wine is for the most part left alone, as the philosophy is one of
"infusion rather than construction". Aging is in oak casks for 11 months.
