Domaine Chanson - Pernand-Vergelesses - Les Caradeux 2012
Estate
One of the great historic producers of France, founded in 1750 and purchased by the Champagne Bollinger family in
1999, Chanson today is one of only six producers in Burgundy still remaining from the 18th century and earlier. Chanson has been meticulously managed since 1999 to become one of Burgundy's top estates. Domaine Chanson's extensive holdings, and the extraordinary rigor and precision of their approach in the vineyards and cellars,
result in wines of individuality and quality.
Tasting notes
Pale golden color. Very delicate floral fragrances mixed with citrus fruit and fresh honey. Beautiful minerality and delicate oak note. Well balanced and well-structured. Voluminous with a well-shaped minerality. Delicate oak note. Very precise and tense. Long aftertaste.
Vineyard
This vineyard of 4.7 acres is ideally located on mid-slope close to the hill of CortonCharlemagne. It has the same marly limestone and clay silt structure and height as its famous neighbor. The only difference is the East exposure of the "Caradeux" which makes of this plot an exceptional terroir providing unique mineral characteristics.
Vinification
Chanson vinifies all their wines 100% whole cluster. They believe the complexity and structure of the wines is greatly enhanced, and the vinification process is improved. The major condition is that grapes must be perfect in terms of ripeness and condition. You can count on one hand the estates dedicated to whole cluster vinification in this manner. Then Champagne-style fractional pressing is done: very precise pressings for the purest juice, with lots vinified separately in small tanks. The wine is for the most part left alone, as the philosophy is one of
"infusion rather than construction". Aged in oak during 12 months.
Vintage
After a very cold winter and a cold spring, the weather at the start of summer was quite demanding. It became fine again in the second half of August with hot temperatures. The harvest commenced early September under a bright sunshine. The combination of all those climatic factors has engendered a significant drop of the yields but quality is there.
