Tasting notes
Ruby red in color with pretty aromatics including fruits notes like blackcurrant and gooseberry.
The palate is ripe with rich tannins, along with spice and toast aromas. A gourmet wine and classic in style for this appellation.
Round wine, ideal for white meats such as rabbit but also lamb and duck and grilled meats, beef and veal braised or fine charcuterie.
Estate
Colin Barollet is an estate located in the celebrated Meursault region of Burgundy, it dates back to 1879. The Domaine is known from producing wines of elegance, finesse, and balance. Increadible wines for this price.
Vinification
Traditional vinification in thermos-regulated stainless steel vats on a 3 weeks period: Cold pre-fermentation maceration and pumping over to extract color and structure. Fermentation with a peak temperature around 30C. Post fermentation maceration at 25C. A part of the wine is aged in barrels, the other part in stainless steel vats. Ageing lasts between 8 to 12 months with malolactic fermentation.
