Dominio del Soto

Established in 2005, in the heart of the Douro Valley of Ribera del Duero, Spain is a precious terroir is farmed according to ancestral methods. Owned by the legendary Chapoutier family, this beautiful 40 acre vineyard is cultivated following the methods of organic farming. Dominio del Soto combines, in a traditional way, the best methods of its homeland and history with the Chapoutier knowledge and experience.

This wine is crafted by Mathilde Chapoutier, the daughter of the Rhone Valley icon. Mathilde is the eighth generation of her family to make wine. She bringings a global insight, and entrepreneurial eye and the vision of a new generation to M. Chapoutier.

The vineyard is located on old terraces, at an altitude of 900 meters above sea level. Its deep soil is clayey-calcareous, with some sandy areas. The vineyards benefit from a Mediterranean continental climate, characterized by hard winters and hot and dry summers, with a significant variation between day and night-time temperatures which creates the balance and complexity of their wines. Harvesting is carried out by hand and carried out in crates of 20kg. Vinification takes place in concrete tanks with cold pre-fermentation  maceration. The wine spends a long 4-6 weeks in vats before being transfered to age in oak barrels.

Ribera del Duero is located in Castilla y León, roughly two hours north of Madrid. Before achieving D.O. status in 1982, a small group of local growers saw potential for the area and applied for D.O. recognition. The rest is history, and Ribera del Duero remains a relatively young appellation to hold such prestige within the wine world. The wineries in Ribera del Duero, however, have hundreds of years’ experience perfecting the art of winemaking. They produce an array of the most flavorful, full-bodied red wines to please every palate and preference.
