Background
San Valentino is an organic winery founded in 1997, nestled in the hills of Rimini near the Adriatic Sea. Covering 15 hectares, it has been fully organic since
2009 under the guidance of the founder Roberto Mascarin. Today, the winery is led by its founder Roberto Mascarin together with local entrepreneur Gianluca Marchetti.
The vineyards are planted with grapes Sangiovese, Cabernet Franc, Syrah, and the native Rebola. Among its projects, the innovative label Floowers, natural wine with
Chestwine technology and the Vivi line, White and Red, a tribute to Valeria Vivian, Roberto's late wife, symbolizing strength, elegance, and personality.
Food pairing
Ideal with pasta in tomato or light meat sauces, risottos, delicate white and red meats, semi-cured charcuterie, grilled vegetables, eggplant parmesan, and pizzas
such as Margherita or topped with light, Mediterranean ingredients like sun-dried tomatoes.
Tasting notes
Ruby intense red color. Aromas of red fruits, violet, aromatic herbs, licorice root, a vegetal note reminiscent of a delicate smoky touch.
On the palate it is vibrant and savory, with lively tannins, warmth, long, elegant finish with a refined bitter note.
Vinification
Fermentation in stainless steel with selected yeasts, aging in steel for 8/10 months. During the process, addition of Chestwine that is an Oneological Tannin,
obtained from by-products of the chestnut tree. It has an antioxidant and antimicrobial activity, it replaces Sulfites ( Natural wine, No added Sulfites).
