Located in the heart of the Cotes de Provence between sea and mountains, and fully classified Côtes de Provence (PDO), the Chateau Saint Baillon houses a country house of the sixteenth century and spread over 200 ha in one piece of wooded hills and vineyards. Since Gallo-Roman times, grapes and olives are grown in Saint Baillon. Many vestiges remain from this period as a "Oppidum" dominant property and terraces built by the Roman slaves to the culture of the vine. Located at 300m altitude on rocky ground limestone and clay to blue marl, terraced hillsides exposed South and West allowing a gradual ripening of the grapes and the terroir in each cuvée. For the sake of quality, the grapes are harvested by hand. All wines are aged and bottled at the Domaine.
Tasting notes
Gentle pink in color, this is a beautifully scented Rosé, with hints of freshly picked raspberries, ripe cherries and a touch of white flowers. On the palate it is gloriously bright and fresh, with a lively mineral edge. The finish is soft and fresh with red fruit that lingers beautifully. An excellent Rosé to savor, glorious!
