Vinification
10 days of maceration with two pump-overs per day. No punch-downs to preserve delicacy. 100% malolactic fermentation.
Ageing
12 months in old 228 L oak barrels (7-8 wines old).
Technical Data
Pinot Noir/41B rootstock - 35 year-old vines.
Tasting Notes
Deep purple hue with garnet highlights. The first nose is slightly kirsch-like, revealing elegant notes of morello cherries and blackberries with a delicate touch of spice. It gradually opens to chocolate nuances reminiscent of Black Forest cake, while subtle hints of rosemary and sloe complete this complex bouquet. The palate is long and structured, offering flavors of red fruits supported by an elegant freshness. The balsamic finish is dense and intense.
