Tasting notes
Blackberry aromas fill the glass, followed by notes of grilled fig, plum and red currant. On the palette, the flavors of blackberry, boysenberry and cassis are supported by a solid core of French oak. This wine finishes with dark fruit and firm tannins.
Technique
Manually harvested and picked at optimum ripeness. Hand sorted in the vineyard. De-stemmed and crushed into a stainless steel fermentation tank. Inoculated with Bordeaux and Red yeast, the wine was pumped over twice daily. Near the end of fermentation, the wine was inoculated with malo-lactic bacteria. The wine was pressed when dry in the fermenter, after which is was racked off the gross lees and moved to barrels. Aged 18 months in Bordeaux style French and Hungarian oak barrels. Racked quarterly to aid the natural clarification. The final blend was assembled and bottled May, 2015.
