Ageing

The grapes are fermented on grape skins in open top fermenters, pressed and coaxed to completion. This wine was aged with a variety of mixed American and French Oak and finally blended to the popular product you are now enjoying.

Food Pairing

Pair with grilled meats and stews (beef, pork, or lamb ) cow's milk cheese and chocolate desserts.

Tasting notes

We embraced the structure up front when making this wine because we wanted a strong phenolic profile to bind with and stabilize the tannin. Baking spices (clove and cinnamon) with a kiss of oak. Ripe black fruit on the palate, black currant and blackberry. A hint of vanilla and smooth tannins on the plush finish.

Warm days and cool evening breezes create a uniquely Mediterranean climate perfectly suited to cultivating premium grapes. These vineyards are meticulously managed by multi-generational family grape growers. They farm with a commitment to sustainable and environmentally friendly agricultural practices, which results in a wine that is both complex and very food friendly

Vinification

After harvest the grapes were destemmed and crushed into temperature controlled stainless steel tanks for fermentation. To add a velvety complexity the wine was then aged in a combination of new and used oak barrels before resting in bottle for several months before release.
