Technical Details
Tasting notes
High layer of cherry-red color. Bright, intense on the nose, resembling ripe fruit, strawberry jam, and prunes. It’s a complex and mineral wine, which opens after moving the glass, reminding its
fruitiness and some aromas resultant of the conduction of its fermentation like balsamic and honey. Full-bodied and gentle in mouth, it turns out to be a tasty wine with a long finish and notes of liquorice and clove. Well balanced, it leaves a long and nice memory in its aftertaste.
Estate
From the Calatayud Denominacion de Origen, at altitudes of between 680 & 1,050 metres, from the villages of Acered, Alarba and Castejon de Alarba. The mountainside vineyards, on soils of slate and quartzite, produce wines with a distinctive mineral quality.
Food pairing
Ideal accompaniment for roast meats, stews and strong cheeses.
Vinification
The first selection of grapes took place in the vineyard, from of at least 40 years old and selected areas. The ripening is strictly controlled in a weekly basis is order to get the optimum ripening point, normally happening during the second week of October. The grapes were hand-picked, and after further selection in the winery, were crushed and after vatted in 5000-10000 liter tanks. Fermentation took place in stainless steel tanks at controlled temperature of 22°C. It’s kept in French oak barrels before bottling.
