Tasting notes
Clean and bright with deep cherry red colour giving way to an attractive crimson tinge at the rim. The Garnacha is clearly distinguishable on the nose, a variety with great aromatic complexity. Subtly sweet aromas reveal blackberry jam, prunes, orange blossom, liquorice and cocoa alonside a variety of wild, aromatic plants on a mineral background. On the palate it is lively, elegant, mouth-filling and structured with a deep, lingering persistence that makes it unique.
Harvest
Manual harvest into small boxes followed by hand selection on sorting table.
Vineyard
The winery and vineyards of our estate are located at a height of 870 metres and are set against the singular landscape of San MartÃn de Valdeiglesias to the southwest of Madrid.
The region is home to sixty year old, non-irrigated vines and this distinctive wine aims to give full expression to the Garnacha grown here in the most natural and respectful way possible.

Vinification
The selected grapes underwent cold pre-fermentation maceration lasting one week until fermentation started spontaneously as a result of the grapes' natual yeast. Traditional production with the harvest from each vineyard being vinified separately with the utmost respect for the grapes and without the use of additives. Racking over a period of three weeks. After malolactic fermentation the wine was aged in French oak barrels for fourteen months and the coupage was done before bottling and without the use of additives or clarifying agents.
