Tasting notes
Inviting flint and mineral aromas with fresh lemon blossom and grapefruit nuances. A delicate cnmposition of lemongrass and subtle, lightly roasted macadamia nut. Polished palate with a smooth texture mouthfeel.
Recommended with Seared Scallops on a bed of Lemom and Herb Risotto.
Ageing
Matured in 300 litre French oak barrels for 10 months, of which one-third was new barrels. The wine has an ageing potential of 5+ years from vintage.
Vinification
After whole duster pressing only the free-run juice was used. 1.5% was fermented and matured in concrete tanks. The remainder of the juice was fermented in stainless steel tanks and 300 litre French oak barrels.
Harvest
The grapes were hand-picked from beginning to end February with an average yield or 8 ton per hectare.
