Lime blossom, pink grapefruit and honeysuckle aromas are set to a green herbal backdrop. Piercing acidity, like sucking on a lemon, makes the hint of sweetness almost unnoticeable. Those citrus and floral notes flow to the finish.

Description

We raise a glass to Nicolas Louis de Lacaille, the French astronomer who in 1752 noted something unexpected in the southern skies. He named the constellation that he saw Horologium: a faint yet beautiful cluster of stars, in the shape of a pendulum clock, thousands of light years from earth.

Tasting notes

A deliciously fresh and crisp Sauvignon Blanc. Aromas of lemons and lime give way to a supernova of rich gooseberry flavours and a clean, fruity finish. This flexable wine will pair with a wide variety of salads, asparagus, artichokes, avocados, apples, chickpeas, crab cakes, cumin, fennel, hummus, Brie, Camembert, feta, goat cheese, mango, cilantro, garlic, tomatoes, turkey, green vegetables, basil, to name just a few.

Vinification

The Marlborough region, on the tip of New Zealand's South Island, benefits from perfect wine- growing conditions, from the weather to the soil. The landscape of wide valleys, rocky slopes and inlets provides the perfect growing conditions for this stellar grape, with loose, gravelly soils resulting in rich aromas and intense flavours that are unmistakeably Marlborough. The wide southern skies also play their part. Warm, sunny days and cool, starry nights allow the grapes to ripen at a slow pace, intensifying the grape’s classic citrus and tropical notes. Good wine takes time after all. The result is the production of stunning, zesty and aromatic Sauvignon Blancs. The grapes for The Horologist were harvested in April, with the fermentation taking place in stainless steel tanks at controlled temperatures for 10-14 days.
