Food pairing

With appetizers of ham, salami, raw meat to the albese stile and vitello tonnato; excellent with pasta and pizza; with second of red and white meat in general, grilled seafood and with seasoned cheeses.

Maturing

vinification process: Full destemming, fermentation controlled at max 29C (85F), maceration by semi-submerged cap tanks with punch-dows for 12-15 days depending on the vintage. Cask ageing in the Cavallotto cellar is for 2 years in large Slavonian Oak botti of 10-20-30-50-80-100 HL. After bottling, the wine is stored in our cellars for a minimum of 6 months before release
