Technical notes
Maturing: Fermentation for at least 5/6 days, maceration time
Vinification: De-stemming and soft pressing of the grapes, fermentation in stainless steel tanks of medium dimension at a temperature of 30 Celsius for 6/8 days. Maceration on the skins for 28 days to maximize the extraction of polyphenolic compounds.
We proceed with 2/3 automatic pumping over.
Ageing: 24 months fining in big oak casks followed by ageing and fining in bottle.
Harvest: Manual / automated 100% hand picked
