Tasting notes
The color is a beautiful ruby red with violet highlights. Expressive on the nose, with jammy red
fruits and soft spices. Particularly silky on the mouth, with very fine grain tannins. This wine
also shows a very nice freshness. Elegant and approachable with a dominating aroma of
ripe fruits, light pepper and a hint of sage. The finish Is soft and fresh, almost minty. A great
Cotes-du-Rhone, very versatile and food friendly.
History
Jean-Pierre Boisson, former long-serving mayor of Châteauneuf-du-Pape, runs Domaine Père Caboche with his children Emily & Nicolas. Members of the Boisson family have been both winemakers and blacksmiths for generations. The family nickname of Caboche derives from the old Provencal word for ‘horseshoe nails’.
Vinification
Harvesting is carried out by picking each plot separately. The grapes are harvested at full maturity and carefully sorted, then slightly destemmed and crushed. Then fermentation takes place under strict temperature control. After the final blend is determined, the wine is aged in big oak barrels for about 2 or 3 weeks.
