Mimi en Provence is the fruit of the traditional grape in AOP Cotes de Provence white of Rolle. This Cotes de Provence expresses itself perfectly in
the 3 years after the harvest. Perfect Terroir to produce a great wine: deep soils made of limestone, clayey sandstone, old alluvial deposit with gravel.
Tasting Notes
Light bright color. Floral and pleasant nose with citrus notes. In the mouth, a fresh wine, well-balanced and subtle.
Vinification
Night harvesting to preserve primary aromas of the grape. From the beginning, the juice is protected from oxidation before pneumatic pressing. Selection of the juices and cold settling for 48 hours. Alcoholic fermentation with controlled temperatures (60.8F) - no malolactic fermentation.
