Description
The hills and ridges separating the village of Chavignol from Sancerre are composed of clay and limestone (65% clay and 35% chalk).
“Les Baronnes” is typical of the Sancerre appellation and the Domaine Henri Bourgeois style.
Tasting notes
Subtle yet powerful, its persistence and harmony find their origin in the quality of the terroir. Crisp and fruity this wine has some lime, apple and gun-flint aromas balanced by ripe tropical and yellow orchard fruits.
Vinification
In order to preserve and develop its aromatic potential, this fine wine is fermented in thermo-regulated stainless steel tanks at 15–18°C. It is then matured on its fine lees at cool temperature for 5 months before bottling.
History
For ten generations now the Bourgeois family has devoted its passion and values to Sauvignon Blanc and Pinot Noir, becoming Sancerre’s most well-known producer. The company is now led by the current generation of the family – Jean-Marie and Remi Bourgeois. The winery and family base is the village of Chavignol, and Domaine holdings can be found on a mosaic of plots throughout Sancerre and Pouilly-Fumé. Each plot is isolated and worked in respect of its origin to reveal, in the most precise and true way, the expression of its terroir, whether we are talking Kimmeridgian marls, flint, or limestone clay soils. We see this expressed in a dizzying array of bottlings, many of which are amongst the most sought after of their kind in the Loire each year.
Food Pairing
A delight at the beginning of the meal, “Les Baronnes” is also an excellent companion to fish dishes such as Scallops with mango emulsion or Roll of bass in curry. The famous Crottin de
Chavignol goat cheese, produced in the same region, is the perfect match.
