Estate
The Chateau is situated in Saint Fiacre in the heart of the Sevre et Maine appellation of Muscadet. The castle from the 15th century has been destroyed during the french revolution and never rebuilt. Only one tower remains today. The current farm has been built with both schist and clay stone coming from the quarries and the castle. The winery has been bought by Bernard Chereau senior in 1953.
Tasting Notes
The color is yellow pale. On the nose, the wine is very fresh and fruity, with subtle citrus notes. In mouth we are surprised by aromas of white flowers and juicy fruits. The finish is nicely mineral.
Vinification
The vines are facing south and planted in a deep schistuous soil. This type of soil has the capacity to make easier the penetration of roots several meters deep.
Winemaking
Half of the winery is harvested by hand. The wine making process is exclusively “sur lie” in stainless steel vats. The aging on the lees and the technique of “batonnage” brings more complexity and fruit to the wine. Bottling occurs in early spring.
