Tasting Notes
With a pale salmon pink color, the wine is light in appearance and tends to show premature garnet, orange edges when young. The nose brightens our greed with ripe red fruits:raspberries, watermelon, and cherries. The palate shows an incredible persistence and a fresh and crisp character. A note of minerality is slightly hidden behind the tannic lace and the beautiful structure of this rose.
Vinification
This rare grape variety is placed in vats for 36 hours maceration in order to obtain the desired color and a wellÂbalanced wine. The alcoholic fermentation temperature is maintained between 18 and 20 C. This process is followed by aging in vats on fine lees for 4 months until bottling.
Estate
Pineau d'Aunis is one of the oldest Loire Valley grape variety, also known as "Black Chenin". It produces light red and rose wines with subtle raspberry and strawberry notes mixed with spices, especially white pepper. This indigenous varietal is very "terroir-sensitive" which greatly reflects the vineyard soils and growing condition that it experiences.
Food Pairing
Its particular flavor with spices and red fruits will be perfect with Japanese food (sushi and sashimi). Apart from these combinations, a terrine of rabbit, a grilled pork meat or a goat cheese from Selles-surÂCher are ideal matches.
