Reviews

James Suckling 94

Baked apples, peaches, cloves, honeycomb and freshly baked croissants on the nose. It's creamy and lightly honeyed on the palate, with richness yet brightness and layered, very fine bubbles. Silky finish. 43% grand cru chardonnay, 29% meunier, 28% premier and grand cru pinot noir, based on the 2017 vintage, with a third of reserve wines from a perpetual reserve dating back to 2006. Vinified in barrels. Five years on the lees. 5 g/L dosage. Drink now.

Vinous Media 93

The NV Extra Brut Sous Bois (base 2016) is one of the more immediate wines in this range from Billecart-Salmon. Fermentation and aging in oak adds curves to this layered, open-knit Champagne. The Sous Bois is not the most complex wine at Billecart-Salmon, but its sheer appeal and allure can't be denied. In this tasting, it is absolutely delicious. This release is based on 2016, with 26% reserve wines back to 2006. Dosage is 2 grams per liter. Disgorged: fourth trimester 2022.

Wine Advocate 93

Based on the 2016 vintage with 26% reserve wines from eight different vintages, Billecart-Salmon's NV Brut Sous Bois exhales a delicate, toasty bouquet of mirabelle, tangerine, white fruits, ripe orchard fruits and baked bread, mingled with delicate notes of vanilla pod. Medium to full-bodied, round and creamy, it's perfectly balanced with a vinous, fleshy core of fruit and a delicately toasty finish complemented with gastronomic bitterness. This blend of 48% Pinot Noir, 32% Chardonnay and 20% Pinot Meunier was disgorged with two grams per liter of dosage.

Wine Enthusiast 93

With 40% of older reserve wines in the blend, this Champagne was fermented in wood. Its aroma brings out toastiness, while on the palate, the richness of the wine suggests maturity. It is a finely balanced wine, ready to drink now.

Wine Spectator 93

Fragrant, with hints of graphite, cherry blossoms and spices, revealing a firm frame of vivid acidity that's tightly meshed with flavors of blackberry tart, lemon granita and salted Marcona almond. Shows a raw silk–textured mousse that carries a chalky note on the finish. Pinot Noir, Pinot Meunier and Chardonnay. Disgorged spring 2022.

Technical Details

Estate

The Champagnes of Maison Billecart-Salmon are above all created thanks to the knowledge of the men who rigorously cultivate an estate of 100 hectares, obtaining grapes from an area totaling 300 hectares across 40 crus of the Champagne region. The majority of the grapes used for vinification come from a radius of 20km around Epernay, where the Grand Crus of Pinot Noir, Pinot Meunier and Chardonnay co-exist, in the ethereal vineyards of the Montagne de Reims, the Vallée de la Marne and the Côte des Blancs.

Food pairing

Its strength of character and integrity make it the ideal accompaniment to hard cheeses, white meats with morel mushrooms, or Girolle mushrooms. Serve at 10 degrees celcius.

Tasting notes

This unique cuvee, which is entirely vinified in oak, is composed of the three Champenois grape varieties. It totally masters the art of blending by renewing the ancestral spirit and savoir-faire of the original champagnes.
A burst of flavors showcasing subtle notes (milk rolls, melted butter, and gentle spices), ideal for the development of fine Champagne wines enriched by meticulous ageing.
