Tasting notes
The nose unleashes aromas of cassis and berries that grow more complex with age and the onset of notes of undergrowth. In the mouth, there is a roundness and finesse that still predominates with a remarkable expression of the terroir.
Food pairing
In its youth it can be drunk with a dash of deer and cherries. After a few years it will happily accompany a Burgundy cheese platter.
Vinification
Classic vinification with pumping. The duration of fermentation varies from 10 to 15 days depending on the vintage. The wine is in barrels for about 12 months, with a proportion of new barrels of 20 to 30%.
