Tasting notes
Volnay has always been appreciated for tis finesse, boday and bouquet. Considered as the most feminin wine pro-duced in Burgundy. Beautiful vivid rubis colour, nice violett, goosebeny, cheny aromas with spices game and prune.
Vinification
The Volnay is produced in respect of Burgundy tradition, yet taking into account modem oenology techniques. Agingin one year used barrel for 18months.Culture is integrated, that means as little treatment as possible.During the winemaking red wines are cooled to 7°C,to enhance the extraction of the colour and aromas. The must is kept at this temperature for ten days or so, depending on the vintage. Then alcoholic fermentation takes place. Once fermentation is complete,solides are separated (seeds, skin, stalks) from the liquid portion. Juice is kept until clarification for a few days before being put into one year used oak barrels for 18 months.
Background
Volnay, perched on the hill of Chaignot high up in the Cote de Beaune, occupies a narrow and steeply sloping site as if to allow more space to the vines.The hill itself is oriented slightly differently from the general run of the country so that the vines face south-east rather than east. These vineyards have been valued and exploited for centuries.The typicity of this red Pinot Noir wine was fixed as early as the 18th century. It gained its controlled appellation status in 1937. The Volnay appellation is twinned with Volnay-Santenots,grown in neighbouring Meursault on ground equally suited to the Pinot Noir grape. Altitudes: 230-280 metres.
