Domaine Chanson - Beaune-Bastion - Premier Cru Blanc 2015
Vintage
After a cool and rainy winter and a frost episode in April, the warm and dry weather in spring was perfect for flowering. In July and August the weather was more demanding. It became fine again early September with a true indian summer allowing for a perfect maturation for the grapes. The harvest took place mid September under bright sunshine. The white wines have very pure zesty aromas mixed with floral fragrances.
Estate
One of the great historic producers of France, founded in 1750 and purchased by the Champagne Bollinger family in 1999, Chanson today is one of only six producers in Burgundy still remaining from the 18th century and earlier. Chanson has been meticulously managed since 1999 to become one of Burgundy’s top estates. Domaine Chanson’s extensive holdings, and the extraordinary rigor and precision of their approach in the vineyards and cellars, result in wines of individuality and quality.
Vinification
Chanson vinifies all their wines 100% whole cluster. They believe the complexity and structure of the wines is greatly enhanced, and the vinification process is improved. The major condition is that grapes must be perfect in terms of ripeness and condition. You can count on one hand the estates dedicated to whole cluster vinification in this manner. Then Champagne-style fractional pressing is done: very precise pressings for
the purest juice, with lots vinified separately in small tanks. The wine is for the most part left alone, as the philosophy is one of "infusion rather than construction". Aging is oak casks for 11 months.
Wine
This cuvée is a blend of grapes sourced from several of Domaine Chanson's 1er cru holdings on the hill of Beaune. It is named after the round fortress in Beaune that forms part of Chanson’s cellars. The soils are a combination of chalk, marl and limestone.
