I love the chocolate and blackberry character, with hints of cedar. Nicely perfumes. Full and very creamy, with soft tannins and a long finish.

Wine Advocate 90

This elegant St.-Emilion has filled out nicely over the last decade. From barrel and post-bottling, I thought it might turn out austere, but that does not appear to be the case. It offers a deep ruby/purple color as well as copious aromas of black cherries, crushed rocks, and earthy undertones. While not a blockbuster, it is beautifully balanced and pure, revealing slightly more depth and richness than I expected. Drink it now and over the next 10-15 years.

This wine is superb. With its power and structure it will age over 20 years or more. Backed by blackcurrant and jelly flavors, it shows great fruity attractiveness even at this early stage in its development. It will develop slowly and evenly to become a reference point for the vintage.

Wine Spectator 93

Loads of toasted oak on this one, with very ripe fruit character. Full-bodied, and very concentrated, yet the tannins are round and creamy. Smoky finish. Exciting stuff here. Best Canon in a long, long time. Best after 2010.

Harvest

The harvests are done entirely by hands. A double selection is made: first the bunches are checked before cutting and then on stainless steel tables.
Merlot: September 22nd (young vines), from September 23rd to 27th
Cabernet Franc: September 28th and 30th
Cabernet Sauvignon: September 28th and 29th

Vinification

- Alcoholic fermentation in thermo-regulated oak vats
- Malo-lactic fermentation done partly in new oak barrels, partly in stainless steel vats
- Ageing in oak barrels, of which 55 % are brand new, racking through the small bunghole at the bottom of the barrel every three months, fining with fresh egg whites and no filtering.
