This is an confident and attractive Caillou Blanc, showing soft apricot and white pear flesh through the mid palate. Not hugely varietal, it is more about the texture of the wine, with bitter almonds on the finish that give both pep and focus.

This has aromas of cardamom, dried lemons, grapefruit pith, nutmeg and chamomile. Some orange curd and praline, too. It's medium-bodied and full of flavor. Persistent. Drink now or hold.

The 2020 Caillou de Talbot Blanc, bottled a month prior to my visit, has a pretty lime and grapefruit scented nose. Hints of white tea emerge with time. The palate is well balanced with almond and caramelized pear notes, a touch of stem ginger emerging with time. Quite spicy, somehow, I can imagine this partnering Asian food with style thank to a scintilla of Muscat lingering on the aftertaste.
