Ageing
10 months in 228-litres and 400-litres French oak barrels, 2 types of
heating.
Background
Situated in Cogny, in the heart of the ochre landscapes of the Pierres Dorees,
and with over 200 years of history, the Domaine Fond Moiroux extends over
more than 16 hectares, certified High Environmental Value. Spread over three
areas: Cogny, in the south of the Beaujolais region, the spearhead of our
conversion to organic farming; Romaneche-Thorins, the heart of the Moulin a
Vent appellation; and Quincie, where we produce our Brouilly wine. The
Domaine Fond Moiroux's rich terroirs are ideal for bringing out the vast range
of aromas of the grape varieties grown there, namely Gamay, Pinot Noir and
Chardonnay.
Tasting notes
This Windmill presents itself with a deep robe and violet reflections.
The nose opens with a balanced blend of spicy notes, notably white pepper
but also licorice, and stewed black fruits, such as blackberry, with hints of
undergrowth adding to this complex and intense aromatic bouquet.
The palate is generous, long, expressing ripe fruits, finishing with a controlled
and elegant woody note. This wine is characterized by its balance and
complexity; its tannic finesse allows us to appreciate it today, a few months in
the cellar will enhance its complexity and elegance.
Terroir
Sandy soil covering shallow granitic scree with very low clay content in
the of Romaneche-Thorins (71). Low vines mainly facing east and west.
Vinification
100% de-stemmed, traditional vinification. Thermoregulated
fermentation for 22 to 25 days for slow extraction and full expression of the
aromas.
