This marries a dash (5%) of still red wine from the Bollinger vineyards with the house's stalwart, complex non-vintage cuvee to fine effect. It has playful red florals and citrus fruits on the nose with freshly grilled hazelnuts, wild berries and spiced-berry biscuits. Actually, it smells superb! The palate offers plenty of concentrated red-apple and bright light-cherry fruit flavors amid a balanced and lively frame. A Champagne that finishes smooth and fresh. Brilliant take on a fresher style.

The latest release of Bollinger's NV Brut Rosé is also showing well, revealing scents of yellow orchard fruit, candied orange peel, pear, dried white flowers and spices. On the palate, it's medium to full-bodied, with good depth at the core, a youthfully frothy mousse and bright balancing acids, concluding with a dry, chalky finish. The Rosé is based on the Special Cuvée blend, with the addition of red wine from Bollinger's vineyards in Verzenay and their famous monopole La Cote aux Enfants.

Sappy and expansive, offering juicy raspberry and bitter cherry flavors and a touch of toasty lees. Tightens up on the long, mineral-driven finish, which leaves a chalky mineral nuance behind.

The pink color comes from the addition of six percent red wine, while the red fruit flavors are inherent in the blend (62 percent pinot noir, 14 percent meunier and 24 percent chardonnay). This feels cool and generous in its ripe red berry flavors, then extremely dry in its red spice finish. Notes of honey and leather add complexity, focusing the wine on roast squab stuffed with wild mushrooms.
