A juicy cabernet sauvignon that really highlights the tension. Redcurrants, cherries and some racy strawberries and bay leaves. Medium- to full-bodied on the palate, showing elegance and subtle complexity to the fruit. Tannins are tight and seamlessly knit. Drinkable now, but better from 2025.

The 2021 Cabernet Sauvignon Signature Limited Edition from Los Chacayes, Uco Valley, stands out with its complex character and delicate, nuanced palate- uncommon for the region. Aged in foudres, it offers black fruit, balsamic tones, maraschino cherry, licorice and field herbs, with a distinct blackberry note. The palate is intense and compact, with firm tannins and a long finish built on pure chalk and a lasting quince note. This is a rare, flavorful continental Cabernet that only Susana Balbo can craft.

Tasting notes

A red Cabernet Sauvignon with ruby hues, a dark end and aromas of spices, currants and roasted red peppers. The palate is harmonious, with notes of black fruits, graphite and a chalky sensation, a hint of tobacco due to the time it spent in French oak and large tannins. Elegant, with a long, persistent finish.

Vinification

Carefully selected clusters. Cold maceration for three days and fermentation in concrete eggs. Extended maceration for 30 days.
