Tasting notes
Aromas of red cherry, vanilla bean and spice are followed by flavors of dried currant and herbs as this wine opens up in the glass. This is a finely-textured and balanced cabernet with a powerful yet elegant finish that will age nicely over the next 10 years.
Vintage 2010
The 2010 vintage marks the 10th anniversary of our Roth Estate Cabernet Sauvignon and after handcrafting these wines and working with some of the same vineyard blocks for a decade, this wine is a true reflection of our passion for the noble Cabernet grape.
Vineyard
The 2010 vintage was a study in extremes. A cold spring with abundant early season rain turned into a summer defined by morning fog that often did not burn off until early afternoon. This relatively cool growing season was hit by an extreme three-day heat wave in August that brought temperatures of up to 116 degrees and devastated vineyards throughout California. Due to the overall cooler season, the fruit had a longer hang-time on the vines and was able to ripen very slowly, giving it more complex f lavors while maintaining its bright acidity.
Winemaking and Cooperage
After hand harvesting and sorting, we placed the fruit into temperature controlled stainless steel tanks where it was cold-soaked at 55°F and pumped over once a day for 7 days. We then turned off the cooling jackets on the tanks to allow the fermentation to start slowly. Each tank was kept below 78°F and pumped over twice a day until primary fermentation was complete. To obtain optimal extraction and texture, we slowly heated each lot to 85°F for an extended maceration period of 10 days. After transferring the wines into barrel, we hand-stirred them weekly until the malolactic conversion was completed. We continued to stir, top, and rack each barrel throughout the 18 months of aging and created the final blend 12 months before bottling.
