Harvest notes
What began with a wet winter and spring continued with rainfall
into mid-June that set the stage for a long, cooler-than-average growing season. After
a consistently cool summer season, growers were rewarded with weeks of fantastic
weather due to a prolonged Indian summer that provided the needed ripening. While
wine quantity was low, the fruit from 2011 will make for well-balanced wines with good
intensity, structure and texture with a brightness of flavor.
Tasting notes
The nose opens with notes of coffee, pepper, dark fruit and a hint of
cola. The palate is layered with blueberry and raspberry compote that
carries through the long finish. This medium-bodied wine is drinkable
now, but will improve in the bottle for another 5-7 years.
Vineyard notes
The 2011 Edge Cabernet Sauvignon was sourced from selected
North Coast vineyards. The North Coast includes Napa, Mendocino, Sonoma and Lake
Counties. The vineyards were chosen for both high quality fruit and tannin structure.
The crops were carefully thinned to insure low yields and healthy clusters.
Winemaking notes
The Edge Cabernet program includes gentle handling of the
grapes at harvest. Complete sorting and de-stemming is done before crushing and
fermentation: 25 days to complete fermentation with pump-overs twice daily. After
pressing, the wine is aged in French and American oak for a minimum of 15 months.
