Vadossi - Chianti Riserva 2013

Ideal with matured cheese, red meat and steaks.
Tasting notes
Color: Ruby red, tending to garnet with aging, good consistency.
Nose: Intense, persistent, characterized by fruity notes of cherry, followed by hints of spices, of black pepper especially.
Palate: harmonic, dry, sapid and a little bit tannic; it becomes soft and velvety with aging.

Aging
Chianti Riserva cannot be bottled until March 1st of the next year of the vintage and it cannot be sold before 3 months aging in bottle.
Production area
Province of Florence, Pisa, Siena, Pistoia and Arezzo (Tuscany region).
Wine making
The grapes, picked up when fully ripped, undergo a process of maceration of the peels for about eight days. Fermentation takes place at a controlled temperature of 28/29 Celsius. The wine is left to refine in bottle until March in thermo-conditioned tanks.
