Food Pairings

Ideal as an aperitif or with medium-aged cold cuts, salty baked snacks or appetizers in general. Also recommended to pasta with vegetable or fish sauce; white meat, steamed or baked fish.

Tasting Notes

Tenuta di Capraia Rosato is a fresh and delicate wine, with a pale coppery pink color. In the nose, it reminds of hawthorn, roses and wisteria over a background of white fruit with light tropical notes, which can be felt again in the mouth, together with intense fruity flavors. An elegant wine, fresh and with pleasant minerality.

Winemaking

50% of the must is obtained by direct crushing of the grapes. It is then statically clarified in a tank where fermentation takes places for 7 days under controlled temperature (14-16C) For the other half, the cap is lifted after only 4h of maceration. The must is then clarified and fermentation takes place for one week under controlled temperature of 14-16C. During fermentation, when approx. half of the process is done, both parts are blended and the alcoholic fermentation goes on for another 7-8 days at 15-17C. The wine rests on the fermentation yeasts for two months before bottling.
